Lemon meringue pie conjures memories of Spring. And Easter …
Easter dinners following Easter Mass.
My sisters and brother and I all dressed up in our new Easter finest. Us three girls in varying hues of pastels. With matching coats. And hats. And gloves. And shiny white patent leather shoes.
I loved those shiny white patent leather shoes …
After Mass we would gather at our home. And change out of our new pastel Easter outfits and shiny white patent shoes before tucking into a crown roast with applesauce and sauerkraut and mashed potatoes …
and my favorite for dessert. Lemon meringue pie.
Last Spring I shared my favorite dessert with my family. Only this time around, instead of using a pie shell, I made individual servings in mason jars. You can find the recipe on my other blog, It All Started With Paint. Just click here …

These look heavenly!!! I have to say that they do make me a little sad…this was my Mom’s favorite dessert and we always had it on Easter along with my Father In-Laws Coconut Custard pie. I haven’t had it since she has been gone…but you know what…I am going to make these and serve them in her honor…they are a little bit different and she would adore the way they look…because they look AMAZING!!!!! Hugs to you my friend and thank you!

The entire recipe would be nice, both websites say the other has it. Guess what? They don’t!
